Did you know that October is National Cookie Month? I’m not making it up – go Google it, and you’ll see… it is like the “Hallmark Holiday” of the baking industry! Hmmm… I wonder if Hallmark has cards celebrating National Cookie Month… I guess I’ll have to Google that later. Because right now I’m going to share with you one of my favorite recipes ever.
This cookie recipe is like chocolate chip cookies and pumpkin cake swirled together. And, there is oatmeal… just enough that I feel like I’m eating something healthy, but not so much that it actually tastes like something healthy (if you know what I mean). This is one of those recipes that gets compliments every time I make it. And not just from my husband. 🙂
Pumpkin Oatmeal Spice Cookies
3/4 c butter
1 c sugar
1 egg
1/2 tsp vanilla
1 1/2 tsp pumpkin pie spice
1 c pumpkin puree
1 1/2 c flour
1/2 tsp salt
1/2 tsp baking soda
1 c quick rolled oats
1 c chocolate chips
Cream butter sugar and eggs. Add pumpkin and pumpkin pie spice. Mix in flour, baking soda, and salt. Stir in oatmeal and chocolate chips. Drop rounded teaspoons full onto a greased cookie sheet. Bake 9-10 min {{edited to add: at 375}}. Enjoy!
