If you’re a mom, you have busy days. Which means you rely on quick dinner recipes, like I do. Yesterday was one of those busy days. We spent our morning hanging out as a family (more on that later this week), and then after we came home I had work to do, projects to get done… and then dinner to get on the table.
On days that I have to, I’ll run through the drive-through to make sure we all eat, and that I can still get the kids to bed somewhere close to bedtime. But I don’t like it. I wasn’t raised on drive-through food, and I like being able to sit down at the table as a family. Having fast dinner recipes prepped and ready to go is important to me – and that is where the new Tyson Frozen Chicken Breasts come in. The marinated chicken breasts come pre-seasoned in flavors like Smokey Steakhouse and Southwest Pepper Trio, you can find them in the frozen section at Walmart. This is an obvious meal to turn to for those nights where I need easy dinner recipes. One thing I love about this recipe is that you can chop your onions and bell peppers ahead of time, and put them in the freezer alongside the frozen chicken. If you don’t normally keep tortillas on hand, you could pop those in the freezer as well and have a full meal waiting for you in the freezer!
Another great thing? These Tyson individually frozen chicken breasts cook in the oven. I can come home from my busy day, toss the chicken breasts on a cookie sheet and throw them in the oven for 50 minutes. No defrosting needed. While they cook, I can give the kiddos a bath and get them ready for bed. 40 minutes later, I sautee the onions and peppers, chop up the cooked chicken… and dinner is ready with only 10 minutes of hands-on time!
If cutting onions makes you cry, here is a great tip: light a candle. It doesn’t have to be a scented candle or fancy candle, but lighting a candle and having it burn close by cuts a lot of the eye-ouch. Plus, it adds ambiance.
Ingredients:
Tyson Flavored Chicken – I used the Southwest Pepper Trio
One red bell pepper
One green bell pepper
One medium white onion
Olive Oil
Flour tortillas
Optional toppings: guacamole, sour cream, salsa
Put 3 chicken breasts on a cookie sheet and cook as instructed on the back of the package.
Chop up onion and bell peppers into strips.
Sautee onion in a pan until softened. Add bell peppers and continue to cook until soft.
Serve with flour tortillas and optional toppings.
