My husband has been trying to be healthier lately. Which is awesome, because it is encouraging me to be healthier, too! It’s not that we were terribly unhealthy before, we were just average.
By just focusing on our health a little, we can make huge improvements. After all, we’re not getting any younger, and with my side of the family having a serious history of cancer, and his side of the family having heart attacks and strokes, we have lots of reasons to shape up. Though our biggest reasons are our two little guys!
Because I want to be healthy, but still enjoy dessert, I whipped up this yummy Baked Apple Crunch. It is like an Apple Pie, but without all the fat and carbs of a crust (and without all the work, too)! I topped it with vanilla yogurt (I picked vanilla yogurt, NOT plain… plain yogurt is just too blah, whereas vanilla yogurt is yummy).
Ingredients:
1/2 an apple per person (pick your favorite, but firm apples work best)
dash of cinnamon
dash of brown sugar
1 tbsp granola per person
2 tbsp Vanilla yogurt per person (NOT plain yogurt)
Directions:
1. Peel apple, cut in half, and remove the core.
2. Place center-up in a baking dish. Cut a slice off the bottom to help it lie flat, if needed.
3. Sprinkle top with cinnamon and brown sugar.
4. Bake at 350 for 30 minutes. Test with a fork for done-ness.
5. Take out, allow to cool slightly, and top with granola and yogurt
