Zucchini Bread Recipe

I have a gigantic Zucchini plant in my backyard. And, it is giving me lots of zucchinis. My husband is convinced he doesn’t like zucchini… so I need to find some really yummy recipes to help him change his mind.

Tante’s Zucchini Bread. Here is the recipe:
2 cups grated zucchini
2 cups sugar (you can substitute splenda for all or part)
3 cups flour
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
1/2 tsp baking powder
3 eggs
1 cup oil
1 tsp vanilla
1 tsp nutmeg
1/2 tsp cloves

Beat eggs slightly. Add sugar, oil, zucchini and vanilla, beating at med speed. Mix dry ingredients together in a separate bowl. Add dry ingredients to the wet mixture, mixing well. Pour into greased floured loaf pans. Bake 50 minutes at 350’F. Makes 2 loaves.

I doubled this recipe. After slicing, Little Moore said “cookies!” After tasting, he wasn’t so convinced. But, the rest of us thought they were delish! I’ll be looking for more zucchini recipes, since it looks like I’ll be getting at least one a week! : )

In looking around, I found a Zucchini Casserole that has bacon in it… and according to my husband, bacon makes everything better! He’s even convinced himself that he’d like to try bacon-flavored ice cream, if they make it. I’ll be trying that recipe (the casserole, not the ice cream) in the next couple weeks.

    Hi, I’m Megan and I just found your blog at New Friend Fridays. I’m loving your zucchini bread post because I love it too, but my husband also says he doesn’t like zucchini- he doesn’t know what he’s missing!
