I didn’t have any bacon on hand to try out the Bacon Zucchini Casserole, so I made some Zucchini fries instead. They were yummy, and the parm in them made them very addictive! Hubby had a long day, and took a nap… that turned into an early bedtime. He’ll have to tell me later if they are any good re-heated.
I found the recipe here. It was super simple to make. Little Moore even “helped” by pouring the crumbs and cheese into the bowl, stirred it up (kind of), and dunked the zucchini strips into the egg/milk mixture. He also spilled some milk, and almost broke an egg (which he calls an “Ik”). But, he had a blast… that’s life with a little one. : D
Ingredients:
- 2 zucchini (I used half of a GIGANTIC one from the garden)
- 1 egg white
- 1/4 cup milk
- 1/2 cup shredded Parmesan cheese (I used a “little” extra – yum!)
- 1/2 cup seasoned breadcrumbs
- Vegetable cooking spray
Preparation
Preheat oven to 425°. Cut zucchini into 3-inch sticks. Whisk an egg white in a small bowl, and add milk. In a separate bowl, combine parmesan and seasoned breadcrumbs. Dip zucchini sticks into egg mixture, and then roll in breadcrumb mixture. Coat a baking sheet with cooking spray, and place zucchini on sheet. Bake for 25–30 minutes or until golden brown.
My “fries” ended up a little more brown on the bottom than on the sides. It might be a good idea to turn them half way through… but they were yummy this way, too!
