Dutch Gingerbread Cookies

One of the staples of my holidays growing up was Spekulaas, which is like a Dutch Gingerbread. It is a lot less spicy or sharp tasting than traditional American gingerbread – which to me makes it much more tasty!

Traditionally, these cookies have almond slivers on them. I’m not a big fan of almonds, but feel free to add almonds is you like!

Ingredients:
1tsp baking soda
1/2 c hot water
2 c unsalted butter, softened
2 c packed dark brown sugar|
4 c all-purpose flour
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground mace
1/4 tsp ground cloves

To make:
Put the baking soda in the water to dissolve.

Beat together butter, sugar, and water mixture until fluffy.

In separate bowl mix dry ingredients. Add to mixture until fully mixed together. Make 3 logs each about 10″ by 2.5″ and wrap in plastic wrap. Freeze at least 4 hours.

Preheat oven to 350 and take logs out of freezer. Cut into slices a little more than 1/4″ and place on cookie sheet. Cook for 12 minutes. Cookies may be slightly soft out of the oven, but will set as they cool. Enjoy!

    I’ve never made gingerbread but I love the flavor! I just enjoy the ones others make but I want to try your recipe this year!
